Roasted Sweet Potatoes


Ingredients:

1 Sweet Potato
1/2tbsp Coriander seeds
1/2tsp Fennel seeds
1/2tsp Oregano leaves (dried)
1/2tsp Black pepper (whole)
1/2tsp Sea salt
2 Garlic pods
1tbsp Olive oil
How to:
  • Preheat the oven at 425 degrees F.
  • Wash and cut the potatoes into small wedges and keep aside.
  • Coarse grind the coriander seeds, fennel seeds, oregano, black pepper and salt.
  • Wrap the baking sheet with aluminum foil and drizzle the olive oil.
  • Now toss the potato wedges and garlic, sprinkle 1/2 of the ground spices (keep the remaining for later) and mix well to coat.
  • Bake for 20 mins or until the edges turn golden brown.
Serve hot as a side with any meat dish.

Oven Baked Salmon with Roasted Veggies

Ingredients:

2 Salmon filet (6 oz each)
2tbsp Olive oil
2tbsp Lemon juice
2-3 Garlic pods
1tsp dried Rosemary
1/2tsp dried Thyme
1/2tsp Cayenne Pepper
Salt
Black pepper
How to:
  • Wash the Salmon filet and pat dry with a paper napkin.
  • In a baking dish, spray olive oil and place the filet skin side down.
  • Drizzle olive oil on each filet and pour the lemon juice on top.
  • Mince the garlic and top it over the filet. You can also add garlic salt, but can't beat fresh garlic.
  • Also sprinkle the dried herbs.
  • Now sprinkle salt and freshly ground black pepper. Also add cayenne pepper for extra heat.
Let it marinate for an hour.
  • Bake at 350 degrees for 20-25 mins or until fish flakes easily.

Roasted Broccoli:

Ingredients:

1 Broccoli
1tbsp Olive oil
3 garlic pods
Salt
Black pepper

How to:
  • Preheat the oven at 400 degrees.
  • Wash and separate the broccoli florets.
  • In a baking dish toss the broccoli and garlic with olive oil, salt and freshly ground pepper.
  • Now bake for 20 mins or until it starts browning.
Crunchy and healthy, absolutely no doubt.

Roasted Red bell pepper

Ingredients:

1 Red bell pepper
3 garlic pods
1 tbsp Olive oil
1/2tsp dried Oregano
Salt
Black pepper
How to:
  • Wash and dry the bell pepper and slice into thin strips.
  • In a baking dish toss it with garlic and the seasonings.
  • Bake at 400 degrees for 20 mins.
You gotta taste the freshly roasted bell pepper, just awesome.
