Baked Spicy Chicken Wings

A perfect party favorite appetizer baked to crunchy outside, moist and juicy inside. This is actually my husband's recipe. Well i wouldn't say a recipe exactly, because his spice mix was prepared by adding some of this and some of that from the pantry. And it worked. He is familiar with those spice powders during his bachelor cooking times. (Check my No Name Chicken recipe for more details) So he experimented out with the the same mix and later i started measuring out ingredients and came up with a share-able recipe. Even now, i like the way he cooks (ahem! which happens rarely) casually without measuring any of the ingredients. Anyways here goes the recipe,

Ingredients:

12-14 Chicken party wings (drumettes and wingettes)
1/2 tsp Turmeric powder
1 tbsp Chicken curry powder
2 tsp Tandoori chicken powder
1/2 tsp Salt
2 tsp Oil
 How to:
  • In a bowl, marinate the chicken wings by mixing in all the spice powders, salt and oil. 

  • Massage the wings and let it marinate for at least 2 hrs or better overnight in the refrigerator.

  • Preheat oven to 400 degrees.
  • Line a baking sheet with aluminum foil and arrange the marinated chicken wings.

  • Bake for 20 mins, flip once and bake for another 20 mins.

  •  Place the baking sheet on the counter for 5 mins before serving.

  • Serve warm with ranch sauce.

Artichoke Feta Frittata

Frittata is prepared using eggs similar to an omelette or quiche. It is enriched with a variety of ingredients, such as vegetables, cheese, herbs or meat. It is a filling dish that can be eaten for breakfast or brunch. Leftover frittata can be refrigerated and will be perfect for your lunchbox the next day. It is very simple and easy to make that i just mixed all the ingredients and baked in the oven. Unlike an omelette, which is served whole, a frittata is divided and served in slices. Not bad for a weekday brunch huh? And here goes the recipe,

Ingredients:

2 Eggs + 1 Egg white
1/2 cup Artichoke hearts (frozen and thawed)
1/2 cup Feta Cheese
1 medium Garlic pod (minced)
1/2 cup Red onion (finely chopped)
1 tbsp Cilantro (chopped)
Crushed Black pepper
Salt
Oil Spray
How to:
Grease a baking pan with the oil spray. Keep aside.
Preheat the oven to 350 degrees.
Beat the eggs well along with the egg white in a big bowl.
Now add the cheese, garlic and cilantro, give a quick stir.
Add the artichokes, red onions, followed by salt and pepper.
Mix well and pour it into the greased pan. 
Bake for 20-25 mins or until the eggs are set and the edges pulls away from the sides. (you can leave it in the oven for another few mins for a crispy edge and golden brown top.)
Slice it up and serve warm with cut fruits.
And we emptied the frittata pan.

Baked Kale Chips

Kale is not only the healthiest cruciferous vegetable, but also one of the most nutritious. It is rich in calcium and high in vitamins. The ruffled leaves naturally have a slight bitter and peppery taste to it. For the chips, the leaves are indianised with our spicy masala powders and baked to perfect crispness. You can't eat just one! So, go ahead and try it for yourself. Here goes the recipe, 

Ingredients:

1 bunch Organic Kale
1tbsp Olive Oil
1/2tsp Chaat masala powder
1/2tsp Red chilli powder
How to:
  • Mix the olive oil, chaat masala and red chilli powder together and keep it aside.
  • Line parchment paper on a baking sheet and preheat oven to 350 degrees.
  • Wash the Kale leaves and shake off the excess water.
  • Tear the leaf into 2"-3" pieces and discard the thick stem.
  • In a big bowl, place the torn leaves and drizzle the oil mixture over it.
  • Gently scrub the leaves and make sure it is coated well with the oil mixture, then place the torn leaves on the baking sheet.
  • Bake for 10-12 mins or until crispy. (I baked for 11 mins exactly.)
  • Serve hot as a snack straight from the oven.

Baked Falafel & Tahini Dip

Be ready to munch as many falafels as you can without any guilt. For a crispier Falafel, the mixture is very well flattened and might look like chickpea patties. Chickpeas are rich in protein and very good for your diet. Normally the deep-fried falafels we eat at the restaurants use uncooked chickpeas. I have also used uncooked chickpeas to prepare the mixture. If you are not ok with it, feel free to use the canned or pressure cooked chickpeas. Here goes the recipe,
Ingredients:

1 1/2 cup Chickpeas/garbanzo beans (soaked and drained)
1/4 cup Onion (minced)
2-3 Garlic cloves
1tsp baking powder
1tsp Coriander powder
1tsp Cumin powder
1tsp Lemon juice
1tsp Olive oil
1/2tsp dried red pepper flakes
2tbsp Cilantro (chopped)
1/2tsp Salt
1/4tsp ground Black pepper

How to:
  • Blend/grind all the above ingredients coarsely and keep aside.
  • Preheat oven to 375 degrees. Line a baking sheet with aluminum foil.
  • Shape the mixture into equal size balls, flatten it out and place it on the baking sheet.
  • Bake for 15 mins on each side or until browned.
  • Let cool and serve warm with the tahini dip.
Dip:

1/4 cup Tahini paste
1 1/2tsp Lemon juice
2tbsp water
Cilantro, minced
Suamc (optional)
  • Mix together the above ingredients and add more/less water for desired consistency. 
  • Sprinkle sumac and serve as a side.

Baked Sweet Potato Chips

A healthy snack, to begin with and yet tasty and crunchy that you can't just munch one. It is  guilt-free and perfect for mindless munching when watching a movie. Ditch the buttered popcorn and opt for these 'good for you' munchies. Also play with the seasonings to make it even more flavorful. Here goes the basic recipe,

Ingredients:

1 large Sweet Potato (found this sweet variety of potato displayed under the name 'Yams')
Black Pepper
Salt
Oil Spray
How to:
  • Preheat oven to 375 degrees
  • Cut the ends of the sweet potato and thinly slice'em with a mandoline slicer.

  • Line a couple of baking sheets with aluminum foil and spray with cooking oil.
  • Now lay the potato slices on the sheet, not overlapping with each other. Spray the potato slices with oil and sprinkle salt and pepper.

  • Bake for 15-20 mins or until golden brown. After 15 mins keep an eye on the baking chips as it might blacken very quickly.

  • Serve hot as a snack.
